  • Healthy Birthday Blueberry Muffins

    I had the opportunity to keep my nieces and nephew overnight recently and somehow cooking is always a part of what we do when they visit. This time we were celebrating my niece Kora’s 5th birthday. When I called her Friday to ask her what she wanted to make for her birthday treats I gave her the choice of cake, cookies or muffins. I could not have been more happy when she said muffins. I was shocked and then quickly remembered almost 3 years ago when we made Paleo Blueberry Muffins and I named the recipe after her in my original blog post. I asked her a couple more questions and sure enough she wanted to make blueberry muffins. I was pretty thrilled that instead of picking up a mix out of a box I was able to head to the fresh fruit aisle and grab blueberries. The rest of the ingredients I had on hand at home.

    It’s hard to believe that our new website has been up and running for a month and a half now. When I think back to the week leading up to our launch, the excitement of a brand new design and allowing people the opportunity to shop 24 hours a day was great but I was filled with fear. I knew the design and navigation of the site would be fine but I was scared to introduce myself to the world as a speaker from Worthington, MN. If you know me well, you know I love to talk and I really love to speak about issues I am passionate about. So it might surprise you I was scared for people to see the Book Amanda to Speak tab on our website.

  • Homemade Taco Seasoning is a Hit

    It was three years ago that I made homemade taco seasoning for the first time. Now, I am happy to say I make my own fajita seasoning, beef stew seasoning, Cajun seasoning and Italian seasoning. It is less expensive and free of unhealthy ingredients like MSG, autolyzed yeast and all of the other preservatives that are in the pre-packaged mixes. This has been a fun kitchen experience and I actually have to pay close attention and write down what I was doing so I can share it here.     So I first started making homemade bone broth three years ago and the first time I made it I could not believe it was SO EASY to make and it tastes delicious. It makes me so happy to have 16 cups of broth in the freezer for use in future recipes. No more store bought cans or containers of chicken broth at the Tate house.
